Armoracia rusticana is known as horseradish and is harvested for its pungent, fleshy roots which are generally grated to make sauces and relishes. The plant itself is large with shiny, dark leaves and insignificant white flowers that appear in summer. This is an extremely vigorous plant that appreciates a quiet, sunny corner where its spreading habit won't crowd out other plants. As a herbaceous perennial, the foliage will die back and return in the following spring.
