The Hatch peppers are a group of mildly spicy heritage cultivars originally grown by the native peoples of New Mexico and developed into modern cultivars from the late 1800s onwards. They are an integral ingredient of the cuisine of the Southwestern US. 'NuMex Joe E. Parker' produces and abundance of long, slender, thick-walled peppers about 6-8 inches long. They are usually picked when green but can be left to age to red. When green, they have a pungent, rich, sometimes smoky flavour. When red, these flavours remain but are joined by a bit more spice and earthiness. Further aging mellows the spiciness. Scoville units of spiciness can range from 1500-3000. Use fresh in salsa, in sauces, for canning, as a stuffing pepper, or grilled or roasted. An early producer at 75-85 days. Mighty Veggies grafted vegetables are hand grafted onto super strong rootstock which provides greater disease resistance, greater cold tolerance (so veggies start growing faster in the spring), and great yield. Mighty Veggie grafted plants usually produce 2-3 times more fruit than ungrafted plants, a difference that is especially large for heirloom varieties which do not always offer high yields.
