Selenicereus undatus (syn. Hylocereus undatus) is a highly prized cactus vine known as pitaya blanca that is cultivated for its sweet-tasting dragon fruit and enormous night-blooming fragrant flowers. The fruit is oblong and about 4-6 inches long by 3-4 inches wide with a bumpy deep pink to nearly red skin. The flesh is white with crunchy black seeds and mildly sweet and very refreshing.
